December 2021 Canning Classes

The December Class schedule is in!

Sign up as classes fill quickly for some of these.

What you get when you pay for a class:

1) Knowledge! You get to learn how to make a new recipe from scratch. You get to learn how to can that recipe. You get to learn how to utilize that canned product into a meal for you and/or your family.

2) You get a snack or meal, depending on what the class is! This is so you can taste what you made and to get one idea of how to use use that jar.

3) You get to meet new people and make new friends! Lots of people have made new and lasting friendships from our classes.

4) By purchasing a class, you are also supporting the Cannery! Every class helps keep our doors open by helping us pay our bills. We are a non-profit Organization and rely on donations, classes, grants, Cannery store purchases and Volunteers to keep us up and running.

5) You get to shop in our Cannery store and check out what local small businesses have to offer while waiting for your jars to process. Every purchase helps a local small business and helps support the Cannery!

6) You always go home with 1 jar of what you made that day, a recipe to make it again on your own and the hands on experience!


BBQ Pulled Pork and Smoky Sweet BBQ Sauce

Date: December 1, 2021

Time: 11:00 am - 2:00 pm

In this class you will learn how to make and can BBQ Pulled Pork and learn how to make a Smoky Sweet BBQ Sauce.

All Students will go home with a jar.

This is a hands on class.

Diced Herbed Tomatoes

Date: December 3, 2021

Time: 9:00 am - 11:00 am

In this class, you will learn how prepare diced herbed tomatoes to can in the pressure cooker. You will go home with a quart sized jar of tomatoes. They can be used in Chili, sauces, soups and salsa.

Autumn Pepper Relish

Date: December 3, 2021

Time: 5:00 pm - 7:00 pm

In this class you will learn how to make an Autumn Pepper relish. This relish can be used in many ways. Serve it with cream cheese, a block of cheese, on baguette slices and many more ways! This is a hands on class. Each student with go home with a small jar.

Lecture - Intro to Home Canning

Date: December 4, 2021

Time: 10:00 am - 12:00 pm

Join us for a two-hour discussion focused on the basics of home canning oriented toward beginners that want to understand the basics of canning before practicing preservation in the kitchen. In this lecture class we will discuss a brief history of home canning, canning tools, sanitization practices, water bath canning, pressure canning, different recipe types, and safe storage practices. The lecture will also focus on the science behind safe canning including pH, the importance of time and temperature, bacterial growth, and why certain food items should not be canned. We will also discuss common canning additives including pectin, citric acid, canning salts, and vinegars.

Bloody Mary Gift Basket

Date: December 4, 2021

Time: 12:30 pm - 4:00 pm

Join us for the ultimate Christmas gift basket that you can easily replicate at home using the water bath canning method. In this class we will be canning tomato juice, pickled dilly beans, and pickled cherry tomatoes. We will also make bloody Mary mix from scratch. None of the recipes require pressure canning! Each student will go home with a pint size jar of each tomato juice, pickled dilly beans, pickled cherry tomatoes, and a 4 ounce jar of mix. You will also receive the recipes to recreate each product at home to make additional gifts.

Beef Barbacoa

Date: December 7, 2021

Time: 6:00 pm to 9:00 pm

These delicious savory tacos are a wonderful precooked meal that surpasses the regular weeknight taco dinner. This recipe is easily pressure canned yet offers extradentary traditional flavors. Each student will go home with a pint sized jar of taco meat. In class we will make fresh tortillas and try our meal for lunch.

Ultimate Veggie Combo

Date: December 10, 2021

Time: 9:00 am to 11:00 am

In this class you will learn the different veggies you can combine to make the "Ultimate Veggie Combo"! This is a great base of veggies to add to soups and more.

All students will go home with a pint jar.

El Pastor Pork Tacos

Date: December 11, 2021

Time: 9:30 am to 12:00 pm

With the combination of citrus, savory spice, and a little kick of heat these tacos are ready for the table with little meal prep. This is a hands on pressure canning class. We will also make fresh tortillas and test our seasonings during lunch. Each student will go home with a recipe card and a pint jar of El Pastor Pork Tacos.

This is a hands on class.

First Responders

Date: December 11, 2021

Time: 1:00 pm to 4:00 pm

This class is a thank you to all of our first responders for your hard work and dedication throughout these difficult times. This class will be open to Firefighters, Police, and Emergency Medical Staff. You will be asked to provide proof of service. We will be pressure canning a meat based complete meal in this class. It will be based upon market price and examples include beef stew, pork pot roast, or taco meat. Each participant will go home with one jar of our final product.

Sloppy Joes and Buns

Date: December 12, 2021

Time: 1:00 pm to 3:30 pm

In this class, you will learn how to prepare sloppy Joes with ground beef. Also you will learn how to make hamburger buns. Then we will pressure can the sloppy Joes in jars. You will have ready made sloppy Joes - just add the bread!!! You will go home with a jar of Sloppy Joes. and some freshly baked buns.
